The Budget Casa

I seem to make casseroles for dinner more than I like to admit, but soups and chili are also great budget-stretchers in my house.

What's your favorite budget friendly meal?

I really like chicken taco soup. I basically put two pieces of chicken in the crockpot with a can of rotel tomatoes with green chilies, a package of taco seasoning and two cans of chicken broth (or my own chicken stock if I have some on hand). Then I let it cook while I am at work.

I come home and bam, there is dinner. We eat it with sour cream, cheese, and sometimes some chips mixed in. It's easy and cheap and we love it.

That sounds delish! I'm making peppers and sausage today - two bell peppers sauteed with onions and some precooked chicken sausage, then a dash of balsamic vinegar on top. We eat it plain or on top of sub buns.
