Raspberry Chicken: Budget Food Tip

Don’t you love to cook those meals that only look fancy, but are in reality super simple to make? This raspberry chicken is one of those – the chicken is baked in the oven or cooked on the grill, and topped with an easy raspberry sauce that’s actually salad dressing. With raspberries in season right now, the makings for this meal are easy to come by, and the flavor is truly fresh.

You’ll need:
3-4 skinless chicken breasts
1 1/3 cup raspberry vinaigrette salad dressing
fresh raspberries and chives for garnish

To make:
Pour 1 cup vinaigrette into a bowl or zip top bag and add chicken. Let sit for an hour or up to overnight, turning frequently to coat chicken. Remove chicken breasts and discard dressing. Grill or sauté chicken breasts until no longer pink inside, basting frequently with some of the 1/3 cup vinaigrette. When chicken is done, remove and plate, and drizzle with leftover vinaigrette. Garnish with raspberries and chives if desired.
