Homemade Pancake Mix: Budget Grocery Tip

There’s no need to buy that boxed, premixed pancake/biscuit mix when you can make it yourself – plus it’s cheaper and fresher, too. In a Mason jar or a container with a tight-fitting lid, combine:

6 cups all-purpose flour
1 1/2 tsp baking soda
3 tsp baking powder
1 T salt
2 T sugar

Shake to mix. Store tightly sealed in the refrigerator, and use within three months.

To make pancakes:


Measure 2 cups of mix into a bowl. Add:

2 cups milk
2 tablespoons oil
2 eggs

Stir with wooden spoon until the mix is moistened throughout; be careful not to overmix. Then use as you would pancake batter. Makes 4-5 servings.
